The bright zing of Juniper is delicately accentuated by herbal bass-tones and citrusy top-notes. The intricate evolution of flavour is owed, primarily, to two distinctly fruity herbs: Lemon Thyme and Apple Mint.
The Physic Garden was established at the palace in 1670 and became the origin of Edinburgh’s Royal Botanic Garden. The 17th-century garden was the first of its kind in Scotland and was created to teach students about the medicinal properties of herbs and to provide pharmacists with fresh plants.
For a twist on the classic gin and tonic, we recommend Elderflower Tonic and sprig of fresh Mint, lightly ‘bruised’ to express their oils – bonus points if you use Apple Mint.
